Veggie Chaat

This one is a nutritious chaat with mixed veggies. Crunchy and yummy chaat. The veggies are all raw or boiled (for potatoes and moong) – the only fried stuff is the garnish – so this makes it a tasty health food.

Now, this chaat is chatpata, but surely healthy 😀
 

 

Ingredients:

Potato: 1 large boiled and peeled

Whole green gram (mung) beans: 2 tablespoons sprouted and cooked till soft

Tomato: 1 medium

Onion: 1 small

Cucumber: ½ an English cucumber or 1 desi variety

Corn: 1 ear or you can use equivalent frozen corn kernels

Lemon/Lime: 1 cut into wedges (optional)

Salt to taste

Green dhania chutney to taste – you can make one from here or here

Imli Chutney to taste – you can make the chutney from this recipe on my blog

Some farsan/sev/mixture to garnish

 

Method:

  1. Mash the boiled potato and mix with the cooked moong.
  2. Finely chop all the other vegetables.
  3. Roast the corn ear – I did it on the gas range. You can use the oven, grill, charcoal stove. If you need guidelines for the same, you can refer this post of mine to roast corn or bhutta.
  4. With a sharp knife, scrape to remove the corn kernels from the cob.
  5. Here are all the ingredients ready to be assembled (Clockwise from bottom left: cucumber, tomato, onion, corn, potato & moong, green chutney):

  6. Mix the veggies and corn kernels in a bowl. Sprinkle a little salt to taste – keep in mind that the chutneys have salt in them.
  7. Add the chutneys as well and mix well to distribute the veggies and chutneys around.
  8.  and  

  9. You may squeeze the lemon/lime over the chaat if you wish. Also, you could even sprinkle red chilly powder or chaat masala over the mixture.
  10. Garnish with sev/farsan, mixture and serve and enjoy the chaat!
