Jeera Alu Sabzi (Cumin Potatoes Dry Vegetable)

It is delish with rotis/parathas or even with rice.
Ingredients:
Potatoes: 3
Cumin seeds: ½ teaspoon
Green chillies: 3
Oil: 1 tablespoon
Salt to taste
Juice of ½ a lemon/lime
Method:
- Boil the potatoes till soft and done. Allow to cool and peel.
- Crumble to small pieces – avoid mashing to a pulp.
- Chop the green chillies – you can chop into fine pieces or to ½ cm pieces as per your choice.
- In a heavy bottomed (non-stick) pan, add the oil and the cumin seeds.
- When they begin to pop, add the chopped green chillies and sauté for a few seconds.
- Reduce the heat to low.
- Add the potatoes and salt to taste. Mix gently so that the oil and spices are blended with the potatoes.
- Roast covered on low heat for 2-3 minutes. Then, stir to roast evenly.
- The vegetable is done when the potatoes are slightly roasted to a golden-brown color at most places.
- Turn off the heat and add the lemon juice. Mix well and serve.
- You can have it with rotis/parathas or rice. It even tastes yumm by itself 😀
