Jeera Alu Sabzi (Cumin Potatoes Dry Vegetable)

Ingredients:

Potatoes: 3

Cumin seeds: ½ teaspoon

Green chillies: 3

Oil: 1 tablespoon

Salt to taste

Juice of ½ a lemon/lime

 

Method:

  1. Boil the potatoes till soft and done. Allow to cool and peel.
  2. Crumble to small pieces – avoid mashing to a pulp.
  3. Chop the green chillies – you can chop into fine pieces or to ½ cm pieces as per your choice.
  4. In a heavy bottomed (non-stick) pan, add the oil and the cumin seeds.
  5. When they begin to pop, add the chopped green chillies and sauté for a few seconds.
  6. Reduce the heat to low.
  7. Add the potatoes and salt to taste. Mix gently so that the oil and spices are blended with the potatoes.
  8. Roast covered on low heat for 2-3 minutes. Then, stir to roast evenly.
  9. The vegetable is done when the potatoes are slightly roasted to a golden-brown color at most places.
  10. Turn off the heat and add the lemon juice. Mix well and serve.
  11. You can have it with rotis/parathas or rice. It even tastes yumm by itself 😀
